General information

There are more than 150 varieties of beans including:

  • Red kidney beans
  • Red kidney beans, small
  • Light speckled kidney beans
  • Red speckled kidney beans
  • White small beans

Origin Canada or China North/North East: no need of fumigation. Origin China South or Ethiopia: fumigation needed.

Beans naturally contain Hydrocyanic Acid (HCN).  Some varieties have a high content, particularly the "Lima beans". This product can present a hazard to health if absorbed in high quantities.  HCN is partially destroyed during cooking.  The maximum indicated in the specifications should not be exceeded.

To guarantee the size of the beans, one can refer to the number of pieces per 100 grams, according to the variety; as well as the shape of the bean: round, oval, kidney-shaped.

In case the beans are to be distributed within a short time, moisture levels up to 16% can be accepted. To store beans for an undefined period of time, the maximum allowed moisture level is 14%.

  • A low moisture level is sometimes difficult to obtain from the last crop.
  • A too high moisture level creates a risk of mould development.
  • A too low moisture level will lead to very long cooking time.

Pre-cooked beans are also available, they allow shorter cooking times.

Importation of food is always subject to acceptance from the national authorities, based on their national and ISO specifications; check these before purchasing.

Impact on the local, national, or regional market availability and prices should be carefully looked at before purchasing large quantities.

Specifications

For all aspects of the product, unless described otherwise below, the standard of Codex Alimentarius last edition applies, including the for packaging.

Analysis of microbiological, chemical or radiological contaminants, toxins, heavy metals and pesticide residues (see tables below) must certify the product is “fit for human consumption”. The supplier shall submit related Lab reports / Declarations.

Specifications vary with national regulations.  Below, you will find the most commonly used specifications. Please refer to HQ when offered specifications different from the standard specifications.  These will need to be approved by a food specialist prior to purchase.
